Title: Roasted Flank Steak W/ Potatoes & Portabella Mushrooms

4mdBaking potatoes
12clGarlic; peeled, smashed &
  . roughly chopped
1cOlive oil (divided use)
2tsSalt
  Black pepper to taste
4 Portabella mushrooms
2lbFlank steak; trimmed of fat

: Place one oven rack on lowest level and one rack on the next level above. Preheat oven to 500 F. Forty minutes before roasting steak and mushrooms@ use fork to prick potatoes once or twice. Place them directly on sides of upper rack of oven, allowing room for mu@hrooms, which will cook on same rack. : Put garlic in blender or food processor with 4 tabl@ spoons of oil. Blend until smooth. Scrape down sides with a rubber spatula. Add remaining oil and salt and pepper. Blend until smooth. : Put mushrooms in 12x8xlY2-inch roasting pan. Using spatula, scrape out half of garlic mixture into pan. Rub puree into both sides of each mushroom cap. Allow to marinate for 30 minutes. : Put steak in shallow container large enough to hold it. Pour over remaining garlic mixture and rub into both sides of steak. Let marinate on kitchen counter at least 30 minutes or until meat comes to room temperature. : Before roasting steak and mushrooms, put a 14x12x2- inch roasting pan on lower oven rack and preheat for 10 minutes. Remove pan. Immediately, put steak with all @f its marinade in pan. Place on lower oven rack, thickest part of steak to rear of oven. Place mushrooms on upper rack at same time. For rare, roast steak on one side for 6 minutes (for medium, 8 minutes). Turn steak and mush- rooms. Roast 6 minutes more. Remove steak, mushrooms and potatoes from oven. Let steak rest 5 minutes. Slice thinly against grain at 7@degree angle.
